Ingredients:

  • ½ lb. mixed berries
  • ½ cup fresh basil
  • 3 tablespoons fresh orange juice
  • 3 tablespoons  sugar
  • 2 tablespoons fresh lemon juice
  • Club soda 

Directions:

  1. Stir together berries, basil, orange juice, sugar, and lemon juice until sugar is dissolved and some berries have broken down. Let stand 10 minutes.
  2. Serve over ice topped with club soda.

Ingredients:

  • 1 ½ pt. fresh raspberries
  • 2 tablespoons sugar
  • 2 tablespoons fresh lemon juice
  • 1 bottle sparkling rosé, chilled
  • Sliced lemons and raspberries, for serving

Directions:

  1. Smash raspberries with sugar and lemon juice in a pitcher. Top with sparkling rosé. Serve over ice with sliced lemons and raspberries.

Ingredients:

  • 1 cup sugar
  • 2 tablespoons minced fresh ginger
  • 2 very ripe peaches
  • 2 litres soda water
  • 16 fresh mint leaves

Directions:

  1. In a medium saucepan over medium-low heat, bring 1 cup water, sugar, and ginger to a gentle simmer, stirring to dissolve sugar. Remove simple syrup from heat, cover, and steep for about 30 minutes.
  2. Over a medium bowl, pour syrup through a fine-mesh sieve, pressing minced ginger against sieve with the back of a spoon to extract flavour. Discard ginger. Cover bowl with plastic wrap and refrigerate until well chilled.
  3. Evenly distribute peach slices among 8 tall glasses. For each glass, lightly press peaches with the back of a wooden spoon to release their juice. Pour about 2 tablespoons chilled syrup over peaches. (Store remaining syrup in refrigerator for up to 2 weeks.)
  4. Add ice cubes; then top with soda water.
  5. Stir to distribute syrup, peach juice, and soda water evenly.
  6. Garnish with 2 mint leaves.

Ingredients:

  • 1 ½ cups thawed frozen raspberries
  • ¼ cup sugar
  • 1 cup thawed frozen peaches
  • 1 teaspoon fresh lemon juice
  • 2 bottle chilled champagne, cava, or other sparkling white wine
  • ½ pt. fresh raspberries
  • 1 ½ cups thawed frozen raspberries
  • ¼ cup sugar
  • 1 cup thawed frozen peaches
  • 1 teaspoon fresh lemon juice
  • 2 bottle chilled champagne, cava, or other sparkling white wine
  • ½ pt. fresh raspberries

Directions:

  1. In a blender, puree frozen raspberries and 2 tablespoons sugar. Set a fine sieve over a small pitcher and strain puree; set aside.
  2. Rinse blender, then puree peaches with remaining sugar, lemon juice, and 3 tablespoons cold water.
  3. Spoon 2 teaspoons raspberry puree and 2 teaspoons peach puree into each glass. Top off each cocktail with champagne and garnish with fresh raspberries. Serve warm or at room temperature.

Ingredients:

  • ¾ cup sugar
  • 1 small pineapple
  • ¼ small jalapeño
  • ¾ cup añejo tequila
  • ¾ cup blanco tequila
  • Juice of 2 limes (about ¼ cup)
  • 8 cups crushed Ice
  • Peel of 1 lime

Directions:

  1. In a small pot over medium-high heat, bring ¾ cup water and sugar to a boil, stirring until sugar dissolves. Set aside to cool.
  2. In a large pitcher, mash pineapple and jalapeño into a puree with a wooden spoon. Stir in tequilas, reserved simple syrup, and lime juice.
  3. Fill each glass with 1 cup crushed ice, then pour in cocktail. Rub each rim with a lime twist, then add to cocktail.

Spicy Beet Bloody Marys

Ingredients:

  • 3 medium red beets
  • 3 cups tomato juice
  • 2 tablespoons pepperoncini juice
  • Juice of ½ lemon
  • 1 tablespoon freshly ground pepper
  • 2 teaspoon Worcestershire sauce
  • 1 teaspoon prepared horseradish
  • ½ teaspoon ground garlic
  • 6 oz. chilled vodka

Directions:

  1. Preheat oven to 400 degrees F. Wrap peeled and halved beets in foil and roast until tender, 45 minutes. Remove from oven, open foil, and set aside to cool. In a blender or food processor, blend beets, tomato juice, pepperoncini juice, lemon juice, freshly ground pepper, Worcestershire sauce, prepared horseradish, and ground garlic until smooth.
  2. Fill each of 4 glasses with ice and 1 ½ ounces chilled vodka. Top each with beet mixture, and garnish with a stick of celery (we used the leafy hearts) and a cocktail spear threaded with a cocktail onion and a pepperoncini.

Ingredients:

  • 1 cup coconut rum
  • 1 cup amaretto
  • ¼ cup Truvia Nectar
  • 2 cups pineapple juice (without added sugar)
  • 2 cups cranberry juice (without added sugar)
  • Pineapple chunks (to garnish)

Directions:

  1. Combine all ingredients in a mixing bowl and whisk to combine.
  2. Pour into a shallow, freezer-safe dish or bowl.
  3. Freeze overnight or for at least 3 hours.
  4. Remove from the freezer and smash up the frozen mixture with the back of a spoon to create a slush texture.
  5. Spoon into a glass and garnish with fresh pineapple chunks.

Ingredients:

  • 4 oz white rum
  • 2 oz fresh squeezed lime juice
  • 1 cup fresh pineapple, cubed
  • 1 cup fresh or frozen mango
  • ¼ cup filtered
  • 1 cup crushed ice
  • pineapple wedges for garnish

Directions:

  1. Add all ingredients to a blender and blend until smooth.
  2. Divide between cocktail glasses and garnish with pineapple wedges.
  3. Serve and enjoy!
