3 Valentine’s Day Breakfast In Bed Ideas

Nothing says ‘I love you’ more than a delicious breakfast served in bed. If you’re tired of gifting your loved one chocolates and flowers on February 14th, a sweet breakfast-in-bed gesture is sure to impress – after all, isn’t the way to anyone’s heart through their stomach?

Here are three romantic dishes that are sure to impress your Valentine.

Stuffed Challah Bread French Toast

Ingredients:

  • 1 loaf challah bread
  • 4 eggs
  • 1 ¼ cup milk
  • ¼ cup sugar + 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 12 ounces whipped cream cheese
  • 2 teaspoons lemon zest
  • 1 cup fresh raspberries
  • 1/3 cup raspberry jam
  • maple syrup
  • Powdered sugar, for dusting

Directions:

  1. To make the batter, combine the eggs, milk, vanilla, cinnamon and ½ cup sugar in a large bowl. Whisk until combined.
  2. To make the filling, fold together the cream cheese, 2 tablespoons sugar, lemon zest, raspberry jam and 1/3 cup raspberries.
  3. Cut the challah bread into 2-inch-thick slices. Then, use your knife to cut a pocket in each slice of bread. Spoon a tablespoon of filling into each pocket.
  4. Dip each piece of challah bread into the batter. Heat 2 tablespoons butter in a large pan over medium heat. Add two pieces of toast. Cook 3-4 minutes on each side, until golden. Repeat with remaining pieces of toast. Serve with maple syrup, powdered sugar and fresh raspberries.

Ingredients:

  • 3 sweet potatoes, peeled and diced
  • 3 strips of bacon, diced
  • 2 garlic cloves, minced
  • 1 teaspoon dry rosemary
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dry thyme
  • salt to taste
  • 1 tablespoon grape seed oil.
  • 4 eggs
  • 2 avocados, sliced

Directions:

  1. Preheat a large non-stick skillet to medium high heat.
  2. Add bacon to the pan. Cook until the bacon is crispy, about 3-5 minutes.
  3. Using a slotted spoon or fork, remove bacon from the pan and set aside.
  4. Add diced sweet potatoes to the pan (with the bacon grease in it). Toss to coat the sweet potatoes with the bacon grease so they don’t stick to the pan.
  5. Season the potatoes with smoked paprika, rosemary, thyme, salt and the minced garlic. Toss to mix everything together.
  6. Continue to sauté the sweet potatoes until slightly browned, stirring occasionally. Approximately 10-12 minutes.
  7. Heat another skillet to medium high heat.
  8. Spray with cooking spray or add 1 tablespoon of grape seed oil.
  9. Add eggs to the pan and cook to your desired temperature.
  10. Serve eggs on top of 1 cup of the sweet potato hash. Serve sliced avocado on the side.

Cheesy Bacon Spinach Frittata

Ingredients:

  • 4 strips of bacon, diced
  • 3 cups of fresh spinach, diced
  • ½ cup of julienned roasted red pepper
  • 4 ounces goat cheese
  • 1/3 cup of halved cherry tomatoes
  • 10 eggs
  • 1/2 cup of 2% milk
  • Salt & pepper
  • Garnish with fresh diced chives

Directions:

  1. Preheat oven to 350.
  2. In a large bowl, whisk together eggs and milk. Season with salt & pepper and set aside.
  3. Heat a medium size oven safe skillet to medium heat.
  4. Add bacon to pan and cook until slightly crispy, approximately 3-4 minutes.
  5. Pour out bacon grease leaving a tablespoon still in the pan, place pan back on burner and add spinach
  6. Stir until just wilted, about 2 minutes.
  7. Add in roasted red peppers and egg mixture. Stir to mix everything together and top eggs with tomatoes and goat cheese.
  8. Let sit on burner for 4 minutes.
  9. Transfer pan to oven and bake for 10-12 minutes or until the frittata has set. (the eggs don’t wiggle when you shake the pan)
  10. Garnish with chives and serve!
